Sinigang na Hipon
Ingredients:
- 1 1/2 lb shrimp (with head)
- 1 bunch water spinach (kangkong), cut in 3 inch length
- 1 cup string beans (sitaw), cut in 2 inch length
- 2 pieces medium-sized tomatoes, quartered
- 1 large white onion, quartered
- 8 cups water
- 1 pack sinigang mix (tamarind soup base mix), about 1.4 ounce
- 2 pieces banana pepper (or long green pepper)
- 3 tbsp fish sauce (patis)
Method:
- Pour the water in a large cooking pot and bring to a boil
- Add onions and tomatoes and cook until texture becomes soft
- Put-in the sinigang mix and simmer for 2 minutes
- Add the banana pepper and string beans and simmer for 3 minutes
- Add the shrimps and fish sauce then simmer for 5 minutes
- Add the water spinach, turn the heat off, and cover the pot. Let stand for 5 minutes.
- Serve hot. Share and Enjoy!
Adobong Manok
Ingredients:
- 2 lbs chicken, cut into serving pieces
- 3 pcs dried bay leaves
- 4 tbsp soy sauce
- 2 tbsp vinegar
- 3 cloves garlic, crushed
- 1 to 2 cups water
- 1/4 cup cooking oil
- 1/2 tablespoon white sugar
- salt and whole peppercorn
Method:
- In a large container, combine the soy sauce and garlic then marinade the chicken for at least 3 hours
- Place the cooking oil in a pan and apply heat
- When the oil is hot enough, put-in the marinated chicken. Cook all the sides for about 5 minutes.
- Pour-in the remaining marinade and add water. Bring to a boil
- Add the dried bay leaves and whole peppercorn. Simmer for 30 minutes or until the chicken is tender
- Add vinegar. Stir and cook for 10 minutes.
- Put-in the sugar, and salt. Stir and turn the heat off.
- Serve hot. Share and Enjoy!
Fried Fish Sandwich
Ingredients:
- 4 (3 oz.) pounds fresh mahi-mahi fillets
- 1/2 cup all-purpose flour
- 1 cup Panko bread crumbs
- 1/2 cup cooking oil
- 2 eggs, beaten
- 3/4 cup tartar sauce
- 1 beefsteak tomato, sliced
- 4 Romaine lettuce leaves
- 4 pieces Kaiser Roll or hamburger bun
- Salt and pepper to taste
Method:
- Sprinkle salt and pepper on the mahi-mahi fillets.
- Heat the cooking oil in a frying pan.
- Dredge the mahi-mahi in flour and then dip in beaten egg.
- Roll the fish fillet in Panko breadcrumbs while pressing a little to ensure that the crumbs stick.
- Pan-fry each side in low to medium heat for about 4 to 5 minutes.
- Remove from the pan and place in a plate lined with paper towel.
- Assemble the sandwich by arranging the tomato and lettuce. Put the fried fish fillet in and then top with tartar sauce.
Serve with sweet potato fries.

Teriyaki Salmon
Ingredients:
- 2 (5 oz.) salmon fillet
- 1 1/4 cup Teriyaki sauce
- Salt and pepper to taste
- 1/2 teaspoon cornstarch dissolved in 1 tablespoon cold water
Method:
- Place the salmon fillet in a freezer bag and then pour-in 3/4 cup of teriyaki sauce.
Seal the freezer bag and let the salmon marinate for 3 hours.
- Meanwhile, prepare the teriyaki glaze by heating the remaining Teriyaki sauce in a sauce pan and
adding-in the cornstarch diluted in water. Stir and cook until the texture becomes thicker. Turn off the heat and let cool. Set aside.
- Preheat oven to 360 degrees Fahrenheit.
- Arrange the marinated salmon in a greased baking pan. Brush the top with the teriyaki glaze.
- Bake the salmon for 15 to 17 minutes.
- Brush the remaining glaze on top. Arrange each salmon fillet over brown rice.
